simple vanilla cupcakes


Ingredients:

  • self raising flour (1 cup)
  • caster sugar (1/2 cup)
  • unsalted butter (1/2 cup) (softened)
  • 2 eggs
  • 1 tsp vanilla extract

Method:

  1. pre-heat oven to 180°c
  2. add flour, sugar and butter into a small mixing bowl
  3. mix until starts to form bread crumb consistency
  4. add eggs and continue to mix until it combines and turns a pale colour
  5. add in vanilla extract and mix to combined
  6. serve into cupcake cases
  7. place in oven for about 20 – 25 minutes or until a tooth pick comes out clean
  8. let then cool down for about 10 – 15 minutes
  9. ENJOY

Makes about 6 – 8 cupcakes
