Raspberry and apple muffins


Serves: 12

INGREDIENTS

  • 1 large apple
  • 150g raspberries
  • 256g plain flour
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 220g soft light brown sugar
  • 50g unsalted butter (melted)
  • 120ml milk
  • 2 eggs

METHOD

  1. Preheat oven to 200C/gas 6
  2. Place 12 muffin cases in a muffin tin
  3. Mix all dry ingredients together in a large bowl
  4. Beat milk and egg together add melted butter, diced apple and raspberries
  5. Mix gently into dry ingredients
  6. Spoon mixture into muffin cases
  7. Bake for 10 – 12 minutes until golden brown and firm to touch
  8. Remove from oven and leave to cool
