Serves 12 – 15 Canapés
- 170g white crab meat
- 1 chilli (either red or green) seeds removed and finely chopped
- 1 tbsp finely chopped coriander
- 1 tbsp virgin olive oil
- zest and juice of 1 lime
- Lettuce – shredded
- Tortilla chips or Prawn Crackers (I used Doritos Original)
- Mixed peppers to decorate
- Mix crab, chilli, coriander, oil and lime together in a bowl.
- Arrange tortillas onto a plate.
- Add a little lettuce to eat and top with a heaped tsp of crab mixture.
- Decorate with fine slices of coloured mix peppers.
- serve immediately otherwise tortillas will soften.
