Lime & Chilli Crab Canapé


Serves 12 – 15 Canapés

INGREDIENTS

  • 170g white crab meat
  • 1 chilli (either red or green) seeds removed and finely chopped
  • 1 tbsp finely chopped coriander
  • 1 tbsp virgin olive oil
  • zest and juice of 1 lime
  • Lettuce – shredded
  • Tortilla chips or Prawn Crackers (I used Doritos Original)
  • Mixed peppers to decorate

METHOD

  1. Mix crab, chilli, coriander, oil and lime together in a bowl.
  2. Arrange tortillas onto a plate.
  3. Add a little lettuce to eat and top with a heaped tsp of crab mixture.
  4. Decorate with fine slices of coloured mix peppers.
  5. serve immediately otherwise tortillas will soften.
