Jam tarts


Ingredients (makes 20)

  • butter (125g)
  • water (8 – 10 teaspoons)
  • Flour (250g)
  • Jam (any type)

Method

  1. Preheat oven to 180 C
  2.  grease a cupcake tray with butter
  3. in a large bowl, rub together the flour and butter with your hands
  4. add in a little water at a time
  5. roll the pastry into a ball
  6. on a floured surface, roll the pastry out to 1/2 cm thick
  7. use a cookie cutter or cup, cut out circles and place in cupcake tray
  8. add 1 – 2 heaped teaspoons of jam into each tart
  9. bake in the oven for 15 minutes
  10. place on cooling rack
  11. tuck in and enjoy
