Ginger and cranberry biscuits


Serves: 12

INGREDIENTS

  • 6oz self raising flour
  • 4oz soft brown sugar
  • 1 level tsp bicarbonate of soda
  • 1 heaped tsp ground ginger
  • 2oz butter (melted)
  • 1 tsp golden syrup
  • 1 egg
  • 25g dried cranberries

METHOD

  1. Preheat oven to 180C
  2. Place all dry ingredients into a large bowl and mix
  3. Beat egg and add melted butter
  4. Pour into dry mixture adding golden syrup
  5. Mix together into large ball
  6. Divide mixture into 12 balls
  7. Place on baking sheet and place in oven for 10 – 12 minutes until firm to touch
  8. Remove from oven and place on cooling rack
