Cranberry & Chocolate Muffins

There are so many recipe variants for a standard muffin mix and I have tried many lately including using buttermilk or oil but I always go back to using this recipe.  This is my Dads preferred mix.

Makes 12


  • 250g self raising flour – sieved
  • 140g caster sugar
  • 85g melted butter
  • 2 large eggs – beaten
  • 200ml milk
  • 100g white chocolate chips
  • 100g dried cranberries
  • 1 tsp bicarbonate of soda


  1. Preheat Oven to 180C fan assisted / 200c non fan
  2. Place 12 muffin cases onto a 12 hole cake tray.
  3. In a bowl add sieved flour, caster sugar, and bicarbonate of soda. Set aside.
  4. In another bowl add the beaten eggs, butter and milk and mix.
  5. Slowly add the wet mixture to the dry mixture by folding until all combined.
  6. Add the chocolate chips and dried cranberries and fold evenly.
  7. Spoon mixture equally into muffins cases and place into oven for 15-20 minutes until risen and test with a skewer.
  8. Place on a cooling tray.
  9. Best serves warm with ice cream or cream.
