- Plain flour (135g)
- Baking power (1 tsp)
- salt (½ tsp)
- caster sugar (2 tbsp)
- Milk (130ml)
- 1 egg
- Melted butter (2 tbsp)
- Golden or maple Syrup (to serve)
put the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl, lightly whisk together the milk and egg and then whisk in the melted butter.
Pour the wet mixture into the dry mixture and using a fork, beat until you have a smooth batter consistency. Let the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and spread butter on pan.
When butter is melted, pour some batter into pan. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm.
Repeat until all the batter is used up.
Serve with maple or golden syrup and extra butter if you like.
